No Bake Fudge Cookies

 

No Bake Fudge Cookies
From the kitchen of Grandma Pat 


In sauce pan combine:
2 cups sugar
1/2 cup milk
1/4 cup cocoa
1 cube butter
Bring to full rolling boil. Book 1 minute exactly. 
Remove from heat. 
Add 1/2 cup peanut butter and 1 teaspoon vanilla. 
Stir until dissolved. 
Add 3 cups quick cooking oatmeal. 
Mix well. 
Drop by spoonfuls on wax paper or foil.

Nancy’s Fruit Cobbler


 3 TBLS  margarine

1 cup Flour

1 tsp. Baking powder

1/2 cup Milk 

2 or more cups Fruit

1 TBLS  Lemon Juice

3/4 cup sugar

Salt - pinch

1 cup sugar

1 TBLS  corm starch 

1 cup Boiling Water


 1. Place fruit and lemon juice in 8x8 Pyrex pan 

2. Cream margarine and 3/4 cup sugar 

3. Sift flour, baking powder and salt. Add alternately with milk to #2

4. Spread batter over fruit 

5. Mix 1 cup sugar and corn starch - sprinkle over batter

6. Pour boiling water over batter 

Bake in preheated 375 oven for 1 hour

Canned Apple Pie Filling

Ingredients

• 4½  C Sugar
• 1 C Corn Starch
• 2 tsp Ground Cinnamon
• ¼ tsp Ground Nutmeg
• 3 Tbl Lemon Juice
• 5½ -6 pounds tart apples (peeled, cored and sliced.


Directions

In large saucepan, blend first 4 ingredients and 1 tsp salt.  Stir in 10 C water.  Cook and stir till thickened and bubbly.  Add lemon juice.  

Pack apples into hot jars, leaving 1 inch headspace.  Fill with hot syrup, leaving ½  inch headspace.  (Use spatula to help distribute syrup.) 

Adjust lids.  Process in boiling water bath.  

Pints - 15 minutes
Quarts - 20 minutes

Use 1 quart for 8" or 9" pie.

Bake at 400 degrees for 50 minutes/

Lasagna

2 lbs ground beef
1 pkg lasagna noodles
3-4 24 oz jars of Classico Pasta Sauce (I usually buy a mixture of the Four cheese, traditional sweet basil, Tomatoes and basil)
16 oz cottage cheese
16 oz Ricotta cheese
2 lbs grated Cheese (cheddar or cheddar mix)
2 lbs grated mozzarella cheese

Cook Lasgana noodles and rinse until cool.
Cook Hamburger and season with salt and pepper. Add jars of sauce and heat.
Line bottom of 9x13 pan with thin layer of sauce and then 3 strips of noodles. Spoon meat sauce over all 3 strips then a layer of cheddar mix and a layer of mozzarella. Spoon cottage cheese and ricotta cheese over top. I usually do small spoonfuls in 3 across and about 6 long so that when you cut lasagna - each piece would have cottage and ricotta in it. Then repeat layers, noodles, meat sauce, grated cheeses and then cottage cheese and ricotta cheese. Then repeat once more with noodles, meat sauce and grated cheeses. Do not add the cottage cheese and ricotta cheese on top layer. Cover with foil and bake 60 min at 350 then remove foil and bake another 10 minutes or so.

7 Layer Bars


This recipe I got at a Stone Family Reunion and it is a family favorite for the holidays!

1. 1 cube Butter
2. 1-2 packages Graham Crackers- crushed
3. 1 pkg. Chocolate Chips
4. 1 pkg. Butterscotch Chips
5. 2 cups Flaked Coconut
6. 1 can Sweetened Condensed Milk
7. 2 cups Chopped Walnuts 

Melt butter in 9 x 13 pan in 350 oven. While waiting for butter to melt, put graham crackers in gallon zip lock bag and crush with rolling pan until ground. Take pan out of oven and add graham crackers and mix and press down to make crust. Sprinkle coconut across the graham cracker crust and then sprinkle bag of chocolate chips and then butterscotch chips. Then sprinkle the chopped walnuts on the top. Open can of sweetened condensed milk with bottle opener with triangle tip - puncture hole on lid on each side - (see picture) and then drizzle across the top. Bake at 350 for 30 minutes.

Peanut Blossoms

My favorite recipe of my mother’s!!

Peanut Blossoms
(Double batch)
(2 1/2) 1 3/4 c. Flour
(2) 1 t. soda
(1) 1/2 t. salt
(1) 1/2 c. shortening
(2) 1 egg
(2) 1 t. vanilla
(1) 1/2 c. peanut butter
(1) 1/2 c. sugar
(1) 1/2 c. brown sugar
(1/4 c.) 2 T. Milk
Candy kisses

Sift flour, soda and salt and set aside. Cream shortening, peanut butter and sugar. Add egg, milk and vanilla. Beat well. Blend in dry ingredients gradually and mix thoroughly. Shape by rounded teaspoonfuls into balls. Roll in sugar. Place on ungreased cookie sheet. Bake at 375 for 8 minutes. Remove from oven. Place candy kiss in middle pressing down so cookie cracks around edges.  Return to oven   Bake 2-5 minutes longer.

Fruit Cobbler

2 or more cups fruit (blackberries, peaches, etc.)
1 T. lemon juice
3/4 c. Sugar
3 T. butter
Salt-pinch
1 c. Flour
1 tsp. Baking powder
1/2 c. Milk
1 c. Sugar
1 T. corn starch
1 c. Boiling water

1. Place fruit and lemon juice in 8x8 Pyrex (non-metal) pan
2. Cream butter and 3/4 c. sugar
3. Sift flour, baking powder and salt
Add alternately with milk to #2
4. Spread batter over fruit
5. Mix 1 c. Sugar and corn starch, sprinkle over batter
6. Pour boiling water over batter - bake in preheated 375* oven 1 hour.
