Seven Layer Casserole

What would I do without all of Nonnies recipes! My mom and her have provided me with the best recipes! This is another Nonnie favorite.

Layer the following ingredients in 9 x 13 pan

1 cup long grain rice
1 can whole corn (drained)
1 small onion diced
1 green pepper diced
1 can tomato sauce
1 can water
hamburger (1-2 lbs)
salt and pepper
Pour enough water to come up to hamburger. Put 3 strips of bacon on top. Cover with foil. Cook 1 hour at 350°. Remove cover and cook about 20 min or until water cooks down.

Hamburger Veggie Soup

This soup recipe I wrote down as I watched Nonnie make it one day. She said she didn’t use a recipe so I just wrote down what she put in as I watched her make it. It’s my favorite soup!!
1 large can V8 juice + 2 12 oz cans
1 large can water
Swanson's chicken broth
Swanson's beef broth
1 can water
3 stocks celery cut small
3 zucchini cut into small bites
3 carrots cut small
1 large and 1 small can green beans
1 1/2 cans corn (drained)
2 cans carrots
broccoli (flowers only) about 1/2 cup
1can stewed tomatoes (I buy the petite cut tomatoes)
3/4 cup barley (sometimes I add this and sometimes I don't)
salt and pepper

Brown 1 small minced onion, garlic cloves and 2 lbs hamburger.

I vary this recipe. I like to make a large amount and I don't like to buy the 2 smaller cans of V8 and the small can green beans...so I usually buy 2 large cans of V8 and I use 2 cans of green beans, 2 cans of corn (why throw half a can away?) and I don't use the canned carrots....I just use more than 3 fresh cut carrots. I use more veggies....like more than 1/2 cup broccoli! I also sometimes add yellow squash, cut into small bite size pieces. I use a very large stock pot!
Sometimes I use 2 pots and divide the soup into the 2 pots and make one just a veggie soup and add the hamburger to the other to make the hamburger veggie soup.


Taco Salad

Another Nonnie favorite recipe!

2 lb hamburger
1 can kidney beans (drained)
1 lb. grated cheddar cheese

1 head lettuce (3 romaine)
2 large cucumber
3 green onions- diced small
3 large tomatoes
3 Radishes- diced small 
2-3 avocados diced 

1 bag of Doritos

Make a green salad - set aside. Brown hamburger and drain. Add kidney beans and warm. Crunch Doritos on top of salad; then grated cheese and then hamburger and kidney beans. Let set for a few minutes for cheese to melt. Mix 1 cup mayonnaise and a few squirts of ketchup to make dressing and pour on top of salad and mix well.

Can use salsa and sour cream for toppings. (Or add more chips!)

Lazy Daisy Meatballs

Another Nonnie recipe that she shared at my bridal shower. Recipe cards were sent out with my shower invitations and then all the guests included recipes with their gift. These were some of my favorite gifts!
1 lb hamburger
1 tsp salt
1/8 tsp each of pepper, celery salt, and garlic salt
1/2 cup cracker crumbs
1/2 cup water
1 small minced onion
10 1/2 oz can cream of mushroom soup (or cream of chicken soup)
1/2 soup can of water.

Mix meat, seasonings, bread or cracker crumbs, water and onion.
Form into tiny meatballs. Roll in flour and brown in hot fat. Drain off fat.
Mix soup and water and pour over meatballs.
Cover and simmer for 30 minutes.

Filled Coffee Cake

Another favorite Nonnie recipe! I would watch Nonnie make this too! Mel loves this!

Mix together in mixing bowl:

3 cups flour
3 tsp. baking powder
1 cup sugar
1 cup shortening
1 cup milk
2 eggs
1 tsp. vanilla

Spread half batter in 9 x 13 sheet pan.

Mix filling:  

1 cup brown sugar
2 TBS flour
2 TBS cinnamon

Sprinkle 1/2 mixture on top of batter. Pour and spread remaining batter over filling. With remaining filling, add 1 cup chopped nuts. Sprinkle over top of batter. Pour 1/2 cup melted butter over entire cake and bake at 350° for 30-40 min until cake loosens from edge of pan.
