Chinese Casserole

This recipe comes from my mother. Whenever we have this dinner, it always reminds us of Grandma Pat.
At my bridal shower, they gave recipe cards to everyone in the invitations and this was the recipe she shared with me.

Mix in a casserole:
1 cup rice, uncooked ( not minute)
2  cups warm water
2 Tablespoons Soy Sauce
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
** (you can just use 2 cans of Cream of Chicken Soup if you don't like mushroom soup)
Brown 1 pound hamburger with 1 small minced onion and add to casserole

Cook covered for 30 minutes then uncovered for 30 minutes at 350°.
Serve over Chinese noodles and soy sauce.
Mom says good served with tossed green salad, green vegetable and french bread.


Chicken Broccoli Casserole

3 boneless Chicken Breasts, cooked and cubed
2 bunches of fresh broccoli 
2 cans cream of chicken soup
1 cup mayonnaise
1 tsp lemon juice
1/4 tsp curry powder
1 cup grated cheese
Make sauce of soup, mayonnaise, lemon juice, and curry powder.
Place broccoli in bottom of 9 x 13 casserole dish, then chicken. Cover with sauce and sprinkle with cheese. Bake at 350° for 30 minutes.
Optional: You can also add bread crumbs on top and then the cheese if you prefer.

Oatmeal Chocolate Chip Cookies

This recipe came from a friend Diane Gardner. I used to babysit her son and she brought these cookies to me one day and I told her I had to have the recipe! So she shared it with me :)






Cream together first 5 ingredients:
2 cups shortening
1 1/2 cup brown sugar
1 1/2 cup sugar
4 eggs
2 tsp vanilla

Then add:
3 cups flour
2 tsp soda
2 tsp salt
4 cups Oatmeal

then:
1 pkg chocolate chips
2 cups chopped nuts
(if you don't want nuts, add 1 more cup of oatmeal)

Bake at 375° for 8 minutes
